Jim’s Scone Alternative

So Jim is a lover of scones and a lover of staying healthy. So I found this as a healthy alternative for him. Of course they aren’t your typical gluten filled scone but they are still pretty good.

1 1/3 cups of Cashew or almond flour (you can grind up nuts if you can’t find flour)

½ cup arrowroot flour

1/8 teaspoon sea salt

1 teaspoon baking powder

¼ cup coconut oil

3 tablespoons maple syrup

2 teaspoons vanilla

1 egg

1 cup fresh blueberries


Preheat the oven to 350 degrees. In a bowl combine the nut flour you decided to use, arrowroot flour, salt and baking powder.

In a second bowl, combine coconut oil (heat up enough to make a liquid), maple syrup and egg. Combine the wet and the dry ingredients until dough forms.

Fold in the blueberries. Pour batter into a 9 inch round pan that has been greased with butter or coconut oil.

Bake for 30 minutes, until the crust is golden brown. Let cool and you are ready to enjoy!!
