Eggplant with ground Pork and kelp noodles

This is one of my favorite meals and it takes no time to make I can throw it all into a pan right when I wake up at 4:30am yikes! I then get ready and everything is pretty much done.

All you need:

1-2 Eggplants

Pasture Raised Ground Pork .5-1lb

Curry Spice – I like the Penzey’s Sweet Curry the best.

365 Brand Whole foods liquid stevia

sea salt

Half of a  cabbage cut up

1/2 pack Kelp noodles

Throw the pork into a pan and let it start cooking. Throw in the veggies and seasoning.Throw a lid on the pan and let everything cut together.  When veggies look cooked and the meat then you are ready to eat and enjoy. You can throw some in a pyrex dish and heat up later. You should get a couple meals out of this which is nice. You shouldn’t need any fat to cook everything in it will come from the pork.
