So I just made this up and it was great!!!
1 Can low sodium Garbanzo beans
4 shredded Beets
1 cup of cooked quinoa
coconut vineger
4 tbs olive oil
1 lemon
salt/pepper
3 shredded carrots
You can add any extra veggies you want but I just had these laying around. Throw all of the ingredients into a big bowl and mix together. You could also try sesame oil it might give it a great flavor. It is always fun to play and make things up as you go.
